🛒 Ingredients (Makes 8 mini mooncakes)
Snow Skin Dough:
- 40g glutinous rice flour 
- 30g rice flour 
- 30g wheat starch (or cornstarch) 
- 45g powdered sugar 
- 200ml milk 
- 30g condensed milk 
- 25g neutral oil 
- Optional: green food coloring or matcha powder (½ tsp) 
Filling Options:
Option A – Matcha White Bean Paste:
- 180g white bean paste 
- 1 tsp matcha powder 
- Optional: 1 tsp butter or condensed milk for smoothness 
Option B – Matcha Cream Cheese:
- 150g cream cheese 
- 50g powdered sugar 
- 1 tsp matcha powder 
- Optional: splash of vanilla or honey 
Dusting:
- Cooked glutinous rice flour or cornstarch 
🔪 Instructions
1. Make the Snow Skin
 Mix flours and sugar. Add milk, condensed milk, oil, and coloring.
Strain. Steam for 25–30 min until solid.
Cool, knead smooth, wrap, and chill. 
2. Make the Filling
 Mix your filling ingredients.
Chill until firm enough to roll.
Shape into 8 balls (~30g each). Freeze briefly. 
3. Assemble
 Divide skin into 8 pieces (~25g each).
Flatten, wrap filling, seal tight.
Dust lightly and press into a mooncake mold. 
4. Chill
Refrigerate 2+ hours. Eat cold. Best in 2–3 days.
